Winter Warm Pear, Plum and Fig Tea Compote

No alcohol here…..I think I might have said that more than once but still…..here’s a lovely spicy alternative to a boozy fruit compote. You can dollop this warm on ice cream, waffles, granola, oatmeal or pancakes over the festive period! Of course it has a Middle Eastern flavour but you can add a little snifter if you like, sadly I can’t….!

You will need

3 or 4 ripe pears sliced into quarters (the woody ones work well)

6 ripe plum’s halved 

8/10 figs halved

Add any dried fruit you want 

1 large cup of strong earl grey tea *use infuser or two strong teabags 

2 cinnamon sticks 

1 star anise 

2 tsp of honey

1 vanilla bean spilt

1 tsp or pomegranate molasses

1/2 teaspoon of ground cloves 

Peel or rind of one orange

1/4 teaspoon of nutmeg

1/4 teaspoon of ground cardamon 

1/2 cup of fresh orange and lemon juice 

Seeds of 1 pomegranate

How

Simmer the fruit mix on low until the fruit is slightly soft and the liquid reduced. Do not simmer until its mushy. Let the mix cool and then pop it in a bit tight jar in the fridge. 

p.s add toasted almonds or hazelnuts for a festive crunch
