Sweet Potato, Squash & Chicken Traybake

Here is a super easy one pot meal, when cooking on a student budget!  A filling and tasty dish for four serve with crusty garlic bread or spicy potato wedges. This meal serves 4, preparation and cooking time 1hr 15mins and average cost for the meal is £7.00/£8.00 in total

8 skin on chicken thighs

1 large or 2 small red onions cut into wedges

1 onion or small butternut squash (deseeded, peeled and cut into chunks)

2 sweet potatoes cut into wedges

1 large desert spoonful of dried wild thyme or thyme

2 garlic cloves finely chopped

Salt & cracked black pepper

1tbsp olive oil

How to

Heat oven to 170oc or gas 5. Drizzle some oil in the bottom of the roasting tin.  Add onion wedges, sweet potato wedges, squash chunks and garlic.  Arrange chicken thighs around the veg.  Sprinkle oregano and salt & pepper all over and drizzle with some more oil.

Place in oven on middle shelf and roast for 40mins. Check and baste with some of the cooking juice and roast for a further 15mins until chicken cooked through and crispy and veg starting to brown.
