Turkey or chicken, doesn’t matter really! Just a slightly different twist on the usual fare. You can always cheat and buy the Katsu paste, up to you! Great with a salad or minus the roasties, in a sandwich! D x
200/300 g of diced cooked turkey or chicken (alternatively use prawns, Quorn or tofu)
150 mls of fat free yogurt
23 teaspoons of cinnamon powder
handful of chopped apricots or sultanas
Handful of sliced almonds
Handful of desiccated coconut
2 tablespoons of Katsu paste or make your own (recipe below)
salt and pepper
I added tiny roasted new potatoes skin on *optional
Combine and refrigerate.
Combine ketchup, Japanese soy sauce, rice wine vinegar, curry paste or powder, sugar, garlic powder and ginger in a pan and warm through.
Let stand for 1 hour to allow the flavors to incorporate.
