Slow cooked lamb with sweet dried fruits, makes a super tasty dish, when you have been busy all day! Summer or winter….

300g diced lamb

1 onion, peeled and chopped

2-3 cloves of garlic or 2tsp of garlic paste from jar or tube

1tbsp light olive oil or vegetable oil

1/2tbsp plain flour

2 tsp ground cinnamon

1 tsp ground coriander

1tsp of turmeric

1/2tsp of cayenne pepper

1tsp of paprika

1 tsp ground cumin

1tbsp of tomato puree

1 tsp of ginger paste from a jar or tube or you can used 1tsp of ground ginger

300ml hot lamb or vegetable stock made from pod or cube

1 tbsp clear runny honey

1 large sweet potato peeled and chunky chopped

Salt and  black pepper

40g ready to eat dried apricots halved

60g ready to eat dried prunes halved

few fresh mint leaves chopped for serving

toasted almonds for sprinkling when serving

Serves 4

Brown lamb in a non stick pan, drain off the excess fat and spoon into the slow cooker.  Add the onion, flour and spices, tomato puree and stir to coat the meat. Then pour in the stock, honey, sweet potato, prunes and apricots and seasoning and give it all a good stir. Cook on low for about 6-8 hours. Serve with lemon & herb couscous and a sprinkle of toasted almonds and some fresh chopped mint on top!
