I fancied steak and chips…..and then I remembered a visit we had in France and being served steak and chips in a baguette. I have also had South American steak and fries which were quite spicy and moreish so, I decided to update an old recipe for you all! Here’s my version of Peruvian Steak and Fries!
Firstly chop your small potatoes into tiny wedgelets, add salt and pepper, some thyme, lemon and a little olive oil and bake.
Whilst these are baking its time to get chopping!
1 large rib eye steak sliced thin
One bunch of spring onions sliced
1 large red pepper sliced thin
3 large cloves of garlic sliced
1 head of broccoli cut into small florets
1 large tomatoes chopped smashed
Large bunch of fresh coriander chopped
1 tablespoon of jalapeños
1 red Chilli 🌶 sliced
1/2 tablespoon of ground coriander and cumin
Salt and pepper
1/2 teaspoon of all spice
Whilst your wedges are baking, pan fry your garlic, onions and peppers with the spices in a little oil. Then add the steak. Fry until starting to brown. Add your herbs, Chilli and jalapeños. Fry a little and then add the tomato and broccoli! Fry a little more but be sure to keep the broccoli a little crunchy!
For the mini wedgelets
Bake these in the oven prior to pan frying the steak part of the dish!
Add these to the steak pan at the end stage!
Pop in a wrap and enjoy!
