Add a little spice to make this a Christmas favourite! Use clementines during the winter rather than oranges to add a fruitier punch! Ingredients
  1. 200g butter softened, plus a large knob for greasing
  2. 200g golden caster sugar
  3. 6 heaped tbsp fine-cut marmalade
  4. 4 large eggs, beaten
  5. 125g self-raising flour
  6. 75g coco powder
  7. 50g ground almonds
  8. Finely grated zest and juice of 2 oranges
Instructions
  1. Cream the sugar and butter together.
  2. Add the eggs.
  3. Add the marmalade.
  4. Add the zest and juice.
  5. Add the flour, ground almonds and coco powder. *omit flour and up the amount of ground almonds for gluten free.
  6. Pour into the greased loaf or cake tin and bake at 150/160 for 45 minutes or until baked.
Notes
  1. add chopped hazelnuts if you like
  2. add a little cinnamon and nutmeg for a Christmas dessert cake
  3. decorate with orange slices and brown sugar! Or chocolate orange icing.
